Seaweed with Green Vegetables

Ingredients
- 1 10 inch piece of kombu seaweed
- 12 medium mushrooms, quartered
- ¾ pound snow peas or sweet peas
- 6 stalks of asparagus, cut into 2 inch pieces
- 1 medium carrot, cut into 2 inch pieces
- 1 small green pepper, cut into bite-sized pieces
- ½ teaspoon sea kelp
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon tamari
- 4 cups of water
Instructions
- Soak kombu for 5 minutes and cut in 1 inch squares. In a soup pot, boil kombu and carrot in water for 5 minutes. Add remaining ingredients and boil at medium heat for 15 minutes. Good served with brown rice*.
