Heat the olive oil in a large skillet over medium heat. Add the carrots and cook, while stirring, for 2 minutes. Reduce heat to low, cover, and cook another 3 minutes or until tender. Add the curry powder to the carrots and mix well. Continue to cook while stirring for about 30 seconds. Push the carrots to the sides of the skillet. Place the tofu in the center and mash with a fork or potato masher. Add the dill, oregano, cayenne pepper, salt and pepper, mix well, and cook for an additional 2 minutes until heated through. Add the scallions, mix all the ingredients together, serve hot.
