Roasted Potatoes

Ingredients
- 15 small potatoes, cut into bite size pieces
- 10 cloves of garlic, minced
- 2 teaspoons Celtic Sea Salt
- 2 tablespoons extra-virgin olive oil, enough to coat the potatoes
- Black pepper
Instructions
- Preheat oven to 400 degrees. Wash potatoes with a scrub brush in cold water. Slice them into ¼ - ½ inch slices or desired shapes. Put potatoes into a baking dish that has a cover. Add oil, garlic, salt, herbs and pepper. Mix well with your hands. Cover and bake for 1 hour. Taste to see if tender, if not bake longer.
