Rice with Beans

Ingredients
- 1 cup cooked brown rice
- 14 cup of water
- 1 medium onion, coarsely chopped
- 2 cloves of garlic, finely minced
- 2 medium tomatoes, finely diced
- 1 medium zucchini, coarsely chopped
- ½ teaspoon dried oregano
- ½ teaspoon rosemary
- ½ teaspoon basil
- 2 cups of black beans
- Celtic Sea salt
- Black Pepper
Instructions
- Cook the rice and beans until moist and heated through. Meanwhile in a large skillet, add the onions and the garlic. Cook these until tender. Add the tomatoes, zucchini and oregano. Simmer, covered, for 5 minutes or until the vegetables are soft. Add the beans, rosemary, basil, salt and pepper, stirring occasionally until heated through. To serve spoon the mixture over rice.
