Rice Salad

Ingredients
- 4 cups of brown rice
- 1 cup of red peppers, chopped
- 1 carrot, chopped
- 2 tablespoons fresh chives, chopped
- 1 cup of red cabbage, chopped
- 1 cup chopped parsley
- 1/3 cup sunflower seeds
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
Instructions
- Cook brown rice until tender. Drain. Add brown rice with all ingredients except olive oil and vinegar and mix thoroughly. Combine oil and vinegar ins a separate jar and drizzle over vegetables. Toss gently
