Rice Pudding

Ingredients
- 2 cups brown rice, cold
- 2/3 cup thick nut milk
- 2/3 cup of maple syrup
- 2 tablespoons arrowroot powder
- 3 teaspoons grated lemon rind
- 2 teaspoons vanilla
- 1 ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 teaspoon guar gum or xantham gum
- 1/8 teaspoon Celtic Sea Salt
- ½ cup of raisins
Instructions
- 1 cup of dry brown rice makes about 2 cups of brown rice. Preheat the oven to 375 degrees. Combine all the ingredients carefully with a fork so as to not mash the rice. Mix thoroughly. Spread the mixture in a lightly oiled 9 inch casserole dish and bake for 45 minutes uncovered until somewhat firm. Serve hot or cold.
