Red Lentil Soup

Ingredients
- 2 cups of red lentils
- 2 carrots, diced
- 1 teaspoon of vegetable broth powder
- ¼ teaspoon ginger
- 1 teaspoon cumin
- 1 teaspoon of extra-virgin olive oil
- 5 cups of water
Instructions
- Rinse the lentils thoroughly to remove any grit or small pebbles. In a soup pot, bring water, lentils, and carrots to a boil. Reduce heat and simmer for 1 hour, add more water for a thinner soup. Add cumin and vegetable broth, bring to a boil again. Before serving dot with the oil. Serve with brown rice*.
