Rainbow Salad

Ingredients
- ½ cup of arame
- 2cupsof water
- 1 cup of chopped parsley
- 1 quart of chopped red or green cabbage
- 1 large carrot, sliced
- 2 stalks of celery, sliced
- 1 tablespoon roasted sesame oil
- 2 tablespoons umeboshi vinegar or tamari
- 2 tablespoons rice vinegar
- ½ teaspoon dill
Instructions
- Remove any tiny seashells from arame. Cover arame in 1 cup of water. Rub together and whirl to release any sand. Next, lift out the arame and discard any sand. Drain out the water. Put the arame in a mixing bowl. Add the chopped vegetables, oil, umeboshi, honey, sugar, dill, vinegar. Stir in all ingredients together and taste, and adjust seasoning s necessary.
