Pumpkin Bread

Ingredients
- 2 cups of kamut flour
- 4 teaspoons baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon Celtic Sea Salt
- ¼ teaspoon nutmeg
- ¼ teaspoon ginger
- 1 cup broken raw pecans
- 1 cup cooked and mashed pumpkin
- 1 cup maple syrup
- 1/3 cup apple juice
- ¼ cup extra-virgin olive oil
- 2 teaspoons vanilla
Instructions
- Sift all the dry ingredients together except for the nuts. Mix the wet ingredients separately. Lightly oil and flour a bread pan. Preheat the oven to 350 degrees. Mix all the ingredients together thoroughly. Use extra juice or flour to thicken as needed. Scoop the mixture into the pan and smooth the top. Bake 65 minutes until browned and a toothpick comes out clean. Cool 30 minutes before removing from the pan to a rack. Let cool completely before slicing.
