Potato Salad

Ingredients
- 2 quarts boiled potatoes
- 1 cup soy mayonnaise
- 1 large carrot, sliced into matchsticks
- 1 red onion, diced
- 1 tablespoon dill
- Celtic Sea Salt
- Black pepper
Instructions
- Scrub and boil the potatoes in water and cover for about 10minutes, or until tender. Drain the potatoes and save the potato water for soup stock, if you like. Cut the potatoes into 1 inch pieces, and put them in a large mixing bowl with the other ingredients. Stir together. Taste and adjust seasonings.
