Poppy Seed Cake

Ingredients
- 1 ½ cups of water
- 6 tablespoons ground cashews or blanched almonds, raw
- 1 cup of poppy seeds
- Wet ingredients
- ½ cup extra-virgin olive oil
- 1 ½ cups maple syrup
- 1 cup brown sugar
- 4 teaspoons liquid lecithin or 4 tablespoons flax gel
- 2 tablespoons lemon juice
- 2 teaspoons lemon rind
- ½ cup non-dairy milk
- 1 teaspoon vanilla
- 1 teaspoon honey
- Dry ingredients
- 2 cups of kamut flour
- 4 tablespoons arrowroot powder
- 3 ½ teaspoons baking powder
- 2 teaspoons guar gum
- 1 teaspoon Celtic Sea Salt
Instructions
- Blend the water and the ground nuts. Add the poppy seeds and heat the mixture on medium-low heat until it comes to a boil, then cover and set aside for 30 minutes. Mix the wet and dry ingredients separately. Add the poppy seed mixture to the wet ingredients, then add the dry and mix thoroughly. Preheat the oven to 350 degrees. Beat the batter until smooth. Bake in a lightly oiled ad floured pan for 60 minutes until browned and firm. Cool and add frosting.
