Pinto Bean Stew

Ingredients
- 1 cup of pinto beans, presoaked overnight
- 3 ½ cups of water
- 1 strip of wakame
- 3 bay leaves
- 2 leeks, sliced
- 1 large carrots, sliced
- 2 sweet potatoes, diced
- 1 tablespoon miso
- Celtic Sea Salt
- Black pepper
Instructions
- Soak beans overnight. Drain and rinse the beans until the water runs clear. Cover the beans with 3 ½ cups of water, simmer beans, water, bay leaves and wakame for about 20 minutes until beans begin to soften. Add the sliced onion. Scrub the sweet potato and cut into bit size pieces. Add the carrots. Simmer for 20 minutes, or until beans are tender and sweet potato is soft. Taste and season with miso, herbs, honey, sugar, salt and pepper.
