Pepper Pilaf

Ingredients
- 1 cup of quinoa, rinsed
- 1 large leek, sliced
- 1 clove of garlic, minced
- ¼ teaspoon Celtic Sea Salt
- 1cup of couscous
- 2 peppers sliced
- 4 cups of boiling water
Instructions
- Rinse and dry roast the quinoa with sea salt, garlic and leeks for 2 minutes, or until it smells nutty. Add the couscous, peppers and dry roast for 2 minutes. Turn off the heat. Add boiling water. Simmer for 5 minutes or until water is absorbed. Strain and serve.
