Pecan Cookies

Ingredients
- ¼ cup extra-virgin olive oil
- ½ cup maple syrup
- ¼ cup barley malt
- ¾ cup spelt flour
- ½ cup tapioca flour
- 1 cup chopped raw pecans
- ½ cup of raisins
- 1 teaspoon anise seeds
- 1 teaspoon cinnamon
- ½ teaspoon vanilla
- 1/8 teaspoon Celtic Sea Salt
Instructions
- Preheat the oven to 400 degrees. Mix the oil and sweetener together well. In a separate bowl, mix the remaining ingredients, then slowly stir them into the liquid mixture. For each cookie, drop 1-2 tablespoons of dough on a lightly oiled cookie sheet. Cake for 9-12 minutes until lightly browned but still soft. Cool on a wire rack. The cookies get crispy as they cool.
