Peanut Sauce

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 large onion, chopped finely
- 4 cloves of garlic, minced
- 3 cups of water
- 1 cup of natural peanut butter
- 1 cup of unsalted peanuts, raw or roasted
- 5 teaspoons lemon juice
- 4 teaspoons grated ginger root
- 4 teaspoons liquid sweetener
- 4 teaspoon apple cider vinegar
- 1 tablespoon tamari
- ½ teaspoon Celtic Sea Salt
- 1/8 teaspoon cinnamon
Instructions
- Heat the oil and saute the onions and garlic until tender, about 3 minutes. Add all the remaining ingredients, mix thoroughly and simmer on the lowest possible heat for about 35 minutes, stirring occasionally. Serve over whole grains or vegetables.
