Parsnip and Onion Soup

Ingredients
- 2 cups of parsnips, cut into ½ inch cubes
- 2 tablespoons extra-virgin olive oil
- 1 ½ cups onion, diced
- ¾ cup celery, diced
- ¾ cup carrot diced
- 2 tablespoons garlic, minced
- 1 cup split peas, green or yellow
- 9 cups of water
- 3 tablespoons tamari
- 1 tablespoon parsley, chopped
- 1 teaspoon Celtic Sea Salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- 2 drops liquid smoke
Instructions
- Preheat the oven to 375 degrees. Ad parsnips and 1 tablespoon olive oil to well oiled baking sheet. Mix well and bake until the parsnips are soft, approximately 20 minutes, stirring occasionally. While parsnips are cooking, place 1 tablespoon of olive oil in a 5 quart pot over medium heat, add onion, celery, carrot add garlic and cook for 5 minutes, stirring occasionally. Add 6 cups of water and split peas and cook until peas are soft, approximately 20 minutes, stirring occasionally. Slowly add the remaining water, allowing peas to absorb liquid and attain perfect consistency, approximately 5 minutes. Add remaining ingredients, including parsnips and stir well.
