Noodle Soup

Ingredients
- 1 cup of baked tofu, thinly sliced
- 2 cups of rice noodles
- 7 cups of vegetable broth for soup base
- 1 cup dried shiitake mushrooms, soaked and thinly sliced
- Tamari sauce to taste
Instructions
- To bake the tofu, place ½ inch thick slices on a cookie sheet and bake at 350 degrees for 20 minutes or until golden yellow in color. Drop the noodles into a large pot of boiling water and boil for about 8-10 minutes or until just tender, drain in a colander. In a soup pot, combine all ingredients, bring to a boil for about 5 minutes at medium heat. For variety, you can add any chopped vegetable to this soup, it’s a good dish for weak or sick people.
