Mushroom Sauce

Ingredients
- 3 cupsof non-dairy milk
- ½ cup shiitake mushrooms, thinly sliced
- ½ bunch of steamed spinach
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon buckwheat flour
- 1 tablespoon spelt flour
- 1 teaspoon nutritional yeast
- Pinch of saffron
- Pinch of cayenne pepper
- Celtic Sea Salt
- Black Pepper
- Tamari to taste
Instructions
- Place non-dairy milk in a pot on medium heat. Add mushrooms and spinach and cook until mushrooms are soft, approximately 7 minutes, stirring frequently. Create a roux, by placing oils and flours in a small mixing bowl and whisking. Add remaining ingredients and cook until sauce thickens, approximately 5 minutes, stirring frequently.
