Mixed Vegetables Over Rice

Ingredients
- 1 tablespoon extra-virgin olive oil
- 2 medium onions, cubed
- 2 medium green pepper, cubed
- ½ pound mushrooms, halved
- 8 ounces firm tofu, cubed
- 1/3 cup sunflower seeds
- ¾ cup of water
- 1/2 teaspoon basil
- ½ teaspoon basil
- ½ teaspoon rosemary
- ½ teaspoon savory
- ½ teaspoon sage
- 4 cups of cooked brown rice
Instructions
- In a wok or large skillet, heat the oil, then saute the onions until limp. Add the green pepper, mushrooms, tofu, sunflower seeds, water, herbs, and simmer until the vegetables are limp. Serve over cooked brown rice.
