Miso Vegetable Soup

Ingredients
- 12 cups of water
- 1 strip of wakame
- 10 shiitake mushrooms
- 2 onions, sliced
- 1 carrot, sliced
- 6 collard greens
- 2 tablespoons miso
- 1 bunch of scallions, sliced
- 1 teaspoon dill
- Celtic Sea Salt
- Black pepper
Instructions
- Simmer the water, shiitakes, and wakame. Slice them. Discard the stems, or return them to the soup. Add the onions, carrots and simmer for 30 minutes. Add collard greens and turn off the heat. Mash in the miso. Add the honey, sugar, dill, salt and pepper to taste.
