Minestrone Soup

Ingredients
- 8 cups of water or vegetable stock
- 1 package of rice elbow macaroni
- 8 large tomatoes, chopped
- 1 cup of dry kidney beans, soaked and cooked
- 1 cup of dry chick peas, soaked and cooked
- 1 onion chopped
- 1 cup of celery chopped
- 2 carrots, chopped
- ½ teaspoon honey
- 3 tablespoons of tamari sauce, chopped
- ½ teaspoon coconut sugar
- ½ teaspoon thyme
- ½ teaspoon oregano
- 2 tablespoons of extra-virgin olive oil
- 2 cloves of garlic, crushed
- Celtic Sea Salt
- Black pepper
Instructions
- Saute the onion in oil and add the water and vegetables. Simmer for about 40 minutes or until vegetables are tender. Add the pre-cooked beans and extra herbs, and the remaining ingredients and cook for an additional 20 minutes. Add the macaroni, serve.
