Millet Pilaf with Mung Beans

Ingredients
- 2 tablespoons olive oil
- 1 cup of shallot, minced
- ½ teaspoon cilantro, chopped
- ½ teaspoon sage
- 1 teaspoon dried basil
- 1 cup of millet, picked over, rinsed, drained
- 3 cups of vegetable stock
- Celtic Sea Salt
- Black Pepper
- 2 cups of mung beans
Instructions
- Heat a medium sauce pan on medium high heat. Add olive oil and swirl pan to coat the bottom. Add shallot. Saute until beginning to soften, about 3 minutes. Add herbs, saute briefly, until aromatic. Add millet and stir to combine other ingredients. Saute until excess water from rinsing has evaporated. Add stock and salt. Cover pan and bring to a boil. Turn heat down to low and cook until millet is tender, about 20 minutes. Gently fold in mung beans and serve.
