Millet Mung Bean Pilaf

Ingredients
- 1 tablespoon extra-virgin olive oil
- ¼ cup of shallots, minced
- ½ teaspoon thyme
- ½ teaspoon marjoram
- ½ teaspoon dill
- ½ teaspoon oregano
- ½ teaspoon Italian Seasoning
- ½ teaspoon basil
- 1 cup of millet, rinsed and drained
- 2 ½ cups of water
- ¼ teaspoon Celtic Sea Salt
- Black pepper
- 1 ½ cups of cooked mung beans
Instructions
- Heat a medium skillet on medium-high. Add olive oil and swirl around the pan. Add shallot. Saute until it begins to soften, about 3 minutes. Add herbs, saute briefly. Add millet and stir to combine with the other ingredients. Saute the excess water from rinsing has evaporated. Add water and salt. Cover pan and bring to a boil. Turn heat down to low and cook until millet is tender, about 30 minutes. Gently fold into mung beans and serve.
