Mediterranean Spinach Salad

Ingredients
- 1 medium cucumber, sliced
- 1 green bell pepper, sliced
- 1 tomato, chopped
- 1 red onion, chopped
- 4 cups of spinach
- 10 pitted black olives
- 4 ounces of feta cheese (optional)
- 5 tablespoons extra-virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 clove of garlic, minced
- Nutritional Yeast
Instructions
- Chop the cucumber, bell pepper, tomato and red onion into bit sized pieces and place in a medium sized bowl. Tear the spinach, after washing, into bite sized pieces and add to the vegetables. Add the black olives. Crumble the feta on top. Add extra-virgin olive oil, honey, sugar and minced garlic to the balsamic vinegar and stir until coated evenly. Serve chilled.
