4 cups of chopped vegetables, in 1 inch or smaller pieces
Cucumber or zucchini sliced and quartered
Mushroom chunks or sliced
Small broccoli florets
Small cauliflower florets
Green bell pepper chunks
Beat all the ingredients together except the vegetables. Add the vegetables and toss the mixture to coat the vegetables in oil and herbs. Let it sit in the refrigerator for 2 hours to marinate. Then drain, let wait for 10 minutes then serve.
