Maple Cookies

Ingredients
Wet
- ½ cup Sucanat
- 1/3 cup extra-virgin olive oil
- 3 tablespoons maple syrup
- 2 tablespoons ginger juice
- 4 teaspoons molasses
- 4 teaspoons applesauce
- ½ teaspoon honey
- ¼ teaspoon vanilla
Dry
- 1 1/3 cups spelt flour
- 2 teaspoons flax seeds, ground
- 2 teaspoons arrowroot powder
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1/8 teaspoon ground cloves
- ¼ teaspoon Celtic Sea Salt
- Pinch of allspice powder
- Pinch of cardamom powder
Instructions
- Preheat the oven to 400 degrees. Mix wet ingredients together in a bowl. Sift dry ingredients in a separate bowl. Add dry to wet and mix well. Refrigerate dough for 10 minutes. Form cookies with approximately 2 ½ tablespoons of dough on a well-oiled cookie sheet and bake for 10 minutes. Let cool.
