Mango Chutney

Ingredients
- 2 tablespoons sesame oil
- ½ teaspoon cumin seeds
- ½ teaspoon brown mustard seeds
- 1 onion, diced
- 1 tablespoon ginger, peeled and minced
- 1 ½ teaspoons jalapeno pepper, seeded and minced
- 3 medium mango, firm, chopped
- ¼ cup red bell pepper, diced
- 1 ½ teaspoons apple cider vinegar
- 1 ½ teaspoons mirin
- 1 ½ teaspoons Shoyu
- 2 tablespoons Sucant
- 2 tablespoons cilantro, minced
- ½ teaspoon Celtic Sea Salt
- ¼ teaspoon coriander powder
- ¼ teaspoon black pepper
- Pinch of cardamom powder
- Pinch of cayenne pepper
Instructions
- Place oil in a 3 quart saucepan on medium high heat. Add cumin and mustard seeds and cook for one minute, stirring constantly. Add onion, ginger, jalapeno, cook for 5 minutes, stirring frequently. Add mango, bell pepper, apple cider vinegar, mirin and shoyu, cook for 5 minutes on low heat, stirring frequently. Add remaining ingredients, remove from heat and serve.
