Lotus Seed and Tofu Soup

Ingredients
- 3 cups of firm tofu, cubed
- 2 ½ cups lotus seeds
- 1 cup of fresh green peas
- Black pepper
- ½ teaspoon dill
- Celtic Sea Salt
- 7 cups of water
Instructions
- In a saucepan, boil the lotus seeds in water until soft, but not mushy. Add the remaining ingredients and cook at a medium heat for 5 minutes. Sprinkle with a favorite herb as garnish.
