Lettuce Wraps

Ingredients
- 1 teaspoon ginger, grated
- 1 medium green onion chopped
- ½ cup mixed bell pepper
- ½ cup tofu, cubed
- ½ cup Black beans, rinsed and drained from the can
- 1 cup of Spinach raw, roughly chopped
- 1 tablespoon basil
- 1 teaspoon dill
- 1 teaspoon honey
- 1 teaspoon oregano
- 1 teaspoon of cumin powder
- Celtic Sea Salt
- Black Pepper
- ½ cup quinoa, cooked
- 5 Romaine lettuce leaves, cleaned and trimmed
Instructions
- In a hot skillet, add ingredients in the order given, one by one and cook until mixture is dry. Add the seasonings and add the cooked quinoa. Mix all in a large bowl and let come to room temperature. Then scoop ¼ cup of the mixture into the leaves and serve with favorite dipping sauce. Can be served hot or cold. Tastes better when slightly warm.
