Lemon Poppy Seed Cake

Ingredients
- ½ cup of brown teff grain
- ¼ cup of boiled water
- 1 cup of teff flour
- 3 cups of arrowroot powder
- ½ teaspoon Celtic Sea Salt
- 2 tablespoons baking powder
- ½ cup of poppy seeds
- 1 1/2 cups apple juice
- 1 cup of maple syrup
- ½ cup of extra-virgin olive oil
- ½ cup lemon juice
- ½ cup of vanilla non-dairy milk
Instructions
- Preheat oven to 350 degrees. In a small mixing bowl, pour ¼ cup of boiling water over ½ cup of teff grain. Let it stand for 10 minutes. Combine dry ingredients without sifting in a large mixing bowl. Blend the wet ingredients except the teff in a food processor or blender. Pour the wet ingredients into the dry. Add the wet teff grain. Mix all the ingredients together. Brush a large cake pan with oil. Pour in batter. Bake for 45 minutes.
