Ingredients
- Filling
- 2 cups of pineapple juice
- ½ cup raw ground cashews
- ½ cup tapioca flour
- ¼ cup natural granular sweetener
- 4 tablespoons arrowroot powder
- 2 tablespoons maple syrup
- 2 tablespoons grated lemon rind
- Few dashes Celtic Sea Salt
- Several drops of natural lemon flavoring
- 3 tablespoons fresh lemon juice
- ½ teaspoon vanilla
- Pie Crust
- Tofu Whipped Cream
Instructions
- Blend all filling ingredients except the lemon juice until smooth. Heat the mixture on medium high heat, stirring constantly, until thickened like a paste. Then add the lemon juice and mix well. Place in a crust and chill until firm. Slice and serve with whipped cream if desired.
