Lebanon Couscous

Ingredients
- 1 ¾ cup water
- 1 cup couscous
- 1 cup tomato, chopped
- ¾ cup cucumber, chopped
- 3 tablespoons parsley, chopped
- 2 tablespoons lemon juice
- 1 tablespoon balsamic vinegar
- 1 ½ teaspoons garlic, minced
- 1 teaspoon dill, minced
- Pinch of cayenne pepper
- Celtic Sea Salt
- Black pepper
Instructions
- Bring water to a boil in a pot. Remove from heat, add couscous, cover and allow to sit until all the liquid is absorbed, approximately 10 minutes. Fluff with a fork, pour into a large mixing bowl and place in the refrigerator to cool for 10 minutes. Gently mix with a fork, add the remaining ingredients and mix well.
