Japanese Fried Rice

Ingredients
- 1 tablespoon sesame oil
- 2 tablespoons mirin
- 4 cloves of garlic, minced
- 1 inch piece of ginger, grated and squeezed
- 2 carrots, sliced into matchsticks
- 3 stalks of celery, sliced
- 3 cups cooked brown rice
- 2 tablespoons tamari
- 4 scallions, sliced
- ½ teaspoon chopped parsley
- Celtic Sea Salt
- Black pepper
Instructions
- Heat a wok or heavy skillet. Add sesame oil, mirin, dill, honey, parsley and garlic. Squeeze in ginger juice. Add and saute carrots for 5 minutes. Add and saute celery for 3 minute. Stir in rice and tamari. Turn off heat and stir in scallions.
