Jamaican Plantain

Ingredients
- 3 medium plantains
- ½ cup green onions, diced
- 4 medium peppers, chopped
- 2 tablespoons Sucanat
- 2 tablespoons lime juice
- 1 tablespoon allspice
- 1 tablespoon thyme
- 1 tablespoon tamari
- 1 tablespoon ginger, peeled and minced
- 2 teaspoons garlic, minced
- 1 teaspoon black pepper
- ¾ teaspoon cinnamon powder
- ¾ teaspoon nutmeg
- ¼ teaspoon vanilla
- 3 tablespoons extra-virgin olive oil
- Celtic Sea Salt
Instructions
- Place all the ingredients, except the plantains and 1 tablespoon olive oil in a food processor or blender and process until smooth. Place in a large mixing bowl with plantains and allow to marinate for 1 hour or longer. Place 1 tablespoon of oil in a large saute pan on medium high heat. Add plantains and cook until plantains become soft, approximately 15 minutes, turning frequently and adding water if necessary to prevent sticking.
