Jamaican Ginger Beer

Ingredients
- 1 pound of ginger
- 8 tablespoons coconut sugar
- 2 ½ quarts of water
- ¼ cup whole cloves
- 2 ½ teaspoons Allspice
- 1 cup of lime juice
- ½ cup of fresh mint leaves
Instructions
- Set water to boil. Grate ginger and immediately add to water with sugar, cloves, allspice, honey, vanilla. Bring mixture to a boil and simmer for 45 minutes. Remove from heat and cool ginger beer for 45 minutes. Stir in lime juice. Crush then add the mint. Serve over ice.
