Italian Seitan

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 ½ cups onion, sliced thin
- 2 tablespoons garlic, minced
- 1 pound seitan, ½ inch cubes
- ½ cup non-dairy milk
- ¾ cup sun-dried tomatoes, soaked in hot water
- ½ cup sun-dried tomatoes soaked water
- ½ cup pine nuts, toasted
- 3 tablespoons tamari
- 2 tablespoons basil, minced
- 1 ½ tablespoons balsamic vinegar
- 1 tablespoon chopped parsley
- ½ teaspoon oregano
- ½ teaspoon thyme
- ½ teaspoon rosemary
- ¼ teaspoon pepper flakes
- Pinch of cayenne pepper
Instructions
- Place oil in a saute pan on medium high heat. Add onion and garlic, cook for 3 minutes, stirring frequently. Add seitan and sun-dried tomatoes soaked water, cook for 8 minutes, stirring occasionally. Add chopped sun-dried tomatoes and remaining ingredients and stir well.
