Italian Red Sauce

Ingredients
- 3 tablespoons extra-virgin olive oil
- 2 large red bell peppers, seeded and cut into thin strips
- 1 large onion, cut into strips
- 1/2cup tightly packed, chopped fresh basil
- 2 garlic cloves, minced
- ½ teaspoon oregano
- ½ teaspoon nutritional flakes
- ¼ teaspoon tarragon
- ¼ teaspoon savory
- 4 large ripe tomatoes, cored, seeded and chopped
- ½ teaspoon rosemary
- ½ teaspoon thyme
- 1 3x1/4 inch strip orange peel
- Celtic Sea Salt
- Black pepper
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the pepper and onion strips, and cook the onion until soft. Stir in the basil, rosemary, thyme, and garlic and cook for 1 minute. Add the tomatoes and orange peel. Increase heat to high and cook, stirring constantly, until the mixture thickens. Remove from heat and season with salt and pepper. Transfer to the container and refrigerate.
