Indian Mung Beans

Ingredients
- 6 cups of water
- 1 cup of mung beans
- 1 onion, diced
- 1 carrot, cubed
- ½ cup celery, thinly sliced
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon Jalapeno, minced
- 1 tablespoon cumin seed
- 1 teaspoon cumin powder
- ½ teaspoon curry powder
- ½ teaspoon turmeric
- 1 bay leaf
- Celtic Sea Salt
- ½ teaspoon nutritional flakes
- Black pepper
- 2 tablespoons cilantro, minced
- Tamari to taste
Instructions
- Rinse beans and place in a pot with 6 cups of water on medium high heat. Add onion, carrot, celery, garlic, ginger and jalapeno, cook on medium high heat until beans are soft, approximately 30 minutes, stirring occasionally. Add tamari and remaining ingredients, except cilantro, and cook for an additional 5 minutes, stirring occasionally. Add cilantro, remove from heat.
