Hummus Hors D’oeuvres

Ingredients
- 1 small cucumber, sliced lengthwise
- 2 Roma tomatoes, sliced
- 12 spears blanched asparagus, cut lengthwise
- ½ cup grated carrots
- 1 teaspoon oregano
- 1 teaspoon honey
- 1 package of alfalfa sprouts, approximately 12 ounces
- 1 cup chopped, cooked spinach
- 9 ounces crumbled feta cheese
- Hummus
- 1 package flour tortillas
- Tooth picks
Instructions
- Mix hummus with oregano, sugar and honey. Spread ½ cup of hummus on each tortilla approximately ½ inch from the edges. Place desired toppings on the tortilla in a row approximately one third of the way in. This recipe would include 2 slices of cucumber, 2 slices of tomato, 4 spears of cut asparagus, 1 tablespoon of grated carrot, 1/6 package of sprouts, 2 12 tablespoons chopped spinach, 1/5 ounces crumbled feta. Fold small end of the tortilla over the toppings and press lightly down, condensing the volume of the toppings then roll the tortilla the rest of the way. Place toothpicks in the roll approximately 2 inches apart. Cut in between the toothpicks making sure each pin wheel us securely anchored to the toothpick.
