Hot and Spicy Soup

Ingredients
- 8 cups of water
- 6 dried shiitake mushrooms
- 1 inch piece of ginger, sliced into 8 ½ inch slices
- 2 carrots, sliced
- 2 stalks of celery, sliced
- 1 red bell pepper, sliced
- ½ pound firm tofu, sliced into bite size pieces
- 1 tablespoons tamari
- ½ teaspoon hot pepper oil
- Dash of cayenne pepper
- Celtic Sea Salt
- Black pepper
Instructions
- Simmer the shiitake mushrooms in water for 15 minutes. Add slices of ginger and simmer for 10 minutes. Add carrots, celery, and red pepper. Simmer for 10 minutes. Add tofu and simmer for 5 minutes. Add tamari, hot pepper oil, cayenne pepper, honey, thyme, oregano to taste. Serve hot.
