Herb Seitan Salad

Ingredients
- 1 tablespoon extra-virgin olive oil
- 2 teaspoons garlic, minced
- 2 pound seitan, chopped
- 1 cup vegan mayonnaise
- ¾ cup celery, diced
- ½ cup onion, diced
- ½ cup artichoke hearts, diced
- ¼ cup Kalamata olives, chopped
- 1 tablespoon stone ground mustard
- 2 teaspoons tamari
- 2 teaspoons mirin
- 1 ½ teaspoons dill, minced
- 1 teaspoon apple cider vinegar
- 3 tablespoons fresh herbs (basil, thyme etc.)
- ½ teaspoon black pepper
Instructions
- Place oil in a saute pan over medium high heat. Add seitan and garlic and cook for 5 minutes, stirring frequently and adding water to prevent sticking. Combine with the rest of the ingredients in a large mixing bowl and mix well. Place over lettuce.
