Herb Rice

Ingredients
- 1 ½ cup of brown rice
- 2 cups vegetable or citrus pulp
- 2 tablespoons blended spices: thyme, basil, marjoram, sage, savory, Celtic Sea Salt and Black Pepper
- ½ teaspoon thyme
- 2 cups of water
- 1 onion, chopped
- 1 green pepper, chopped
- 1 tomato, chopped
- 1 teaspoon chopped parsley
- 2 teaspoons extra-virgin olive oil
Instructions
- In a medium sized saucepan, combine the uncooked rice, pulp and seasonings along with parsley, honey and sugar. Add water, bring to a boil, stir and cover. Cook over medium heat for 25 minutes or until rice is tender. In a medium sized skillet add the olive oil and sate the onion and pepper for 2 minutes. Add the tomato and saute for 3 minutes. Set aside. When the rice is tender, add the sauteed vegetables, stir and cook for 10 minutes more. Serve immediately.
