Hearty Mung Bean Soup

Ingredients
- 4 cups of water or vegetable stock
- 1 cup of dry mung beans
- 5 tomatoes, chopped
- 1 large onion, chopped
- 2 teaspoons vegetable broth powder
- 2 tablespoons tamari sauce
- ½ teaspoon marjoram
- ½ teaspoon oregano
- ½ teaspoon thyme
- 1 clove of garlic, minced
- ½ teaspoon ginger
- 2 tablespoons dried parsley
- Black pepper
- 1 teaspoon of basil
- Cayenne pepper
- 1 teaspoon of sea kelp
- Celtic Sea Salt
Instructions
- Soak and boil the mung beans for 30 minutes. Add the tomatoes and cook for another 30 minutes. Add the onions and cook for another 30 minutes until the beans have cooked for 90 minutes and are tender. Stir. Add all the other ingredients and cook for 15-20 minutes until the flavors mingle.
