Hazelnut Cake

Ingredients
- 5 tablespoons flax seeds
- 2 cups of apple juice
- ¼ cup extra-virgin olive oil
- 1 tablespoon hazelnut syrup
- 1 cup of maple syrup
- 1 tablespoon vanilla
- 1 cup of hazelnuts
- 2 cups brown rice flour
- 1 cup of barley flour
- 2 tablespoons baking powder
- ½ teaspoon Celtic Sea Salt
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees. Grind the flax seeds in a blender until powdery. Add juice and blend. Add oil, maple syrup, honey sugar, yeast, nutmeg, and vanilla to the blender and mix briefly. Grind the hazelnuts in a food processor. Sift flours, baking powder and salt. Combine all ingredients in a large mixing bowl. Stir. Lightly oil a baking dish, pour batter into pan, bake 40 minutes. Cool on rack before frosting.
