Grilled Tofu in Marinara Sauce

Ingredients
- 1 pound of tofu, firm
- 4 cups of Marinara sauce
- 1 tablespoon extra-virgin olive oil
- 1 onion, chopped
- 1 tablespoon garlic, minced
- 2 carrots, sliced
- 1 bell pepper, chopped
- ½ cup of artichoke hearts, quartered
- 2 tablespoons tamari
- 1 tablespoon capers
- 2 teaspoons vegetarian Worcestershire Sauce
- 1 teaspoon balsamic vinegar
- ½ teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon chopped parsley
- Pinch of red pepper flakes
- Celtic Sea Salt
- Black pepper
Instructions
- Slice tofu lengthwise to form 3 cutlets. Marinate in tamari and grill on both sides. If no grill, cook for 5 minutes each side in olive oil in saute pan. Place oil in a pot on medium high heat. Add onion and garlic and cook for 3 minutes, stirring frequently. Add carrots, bell peppers and cook for 10 minutes, stirring frequently and adding water to prevent sticking. Add tofu and marinara sauce, reduce heat to a simmer and cook for 10 minutes. Add remaining ingredients and mix well.
