Slice tofu lengthwise to form 3 cutlets. Marinate in tamari and grill on both sides. If no grill, cook for 5 minutes each side in olive oil in saute pan. Place oil in a pot on medium high heat. Add onion and garlic and cook for 3 minutes, stirring frequently. Add carrots, bell peppers and cook for 10 minutes, stirring frequently and adding water to prevent sticking. Add tofu and marinara sauce, reduce heat to a simmer and cook for 10 minutes. Add remaining ingredients and mix well.
