Gourmet Minestrone Soup

Ingredients
- 1 cup dry kidney beans, presoaked overnight and rinsed
- 2 cups of rice macaroni
- 5 bay leaves
- 5 cups of water
- 4 inch sea vegetable of your choice (optional)
- 1 tablespoon extra-virgin olive oil
- 8 cloves of garlic, minced
- 1 onion, sliced
- 12 plum tomatoes, sliced
- 3 carrots, sliced
- 2 stalks of celery, sliced
- 1 bunch basil
- Celtic Sea Salt
- Black pepper
Instructions
- Boil the kidney beans until tender. Boil the macaroni and drain and set aside. Simmer the kidney beans, bay leaves and optional seaweed for 30 minutes. Add more water if needed. Saute the onions and garlic in olive oil for 2 minutes. Add them to the kidney beans. Rinse and slice the tomatoes. Add them to the kidney beans. Simmer 1 hour or until they turn into a sauce. Add carrots and celery. Add the macaroni. Simmer an hour until tender. Add herbs, honey and salt and pepper. Simmer 5 minutes and serve.
