Ginger Bread Cake

Ingredients
- 2 cups of spelt flour
- 1 cup of barley flour
- ½ teaspoon Celtic Sea Salt
- 2 tablespoons baking powder
- 1 ½ tablespoons ginger powder
- 1/8 teaspoon allspice
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 3 tablespoons flax seeds
- 2 cups of apple juice
- ½ cup extra-virgin olive oil
- ¾ cup of maple syrup
- 1 teaspoon rice syrup
Instructions
- Preheat oven to 350 degrees. Without sifting, combine flour, salt, cinnamon, nutmeg, ginger and baking powder in a large mixing bowl. Grind flax in a blender and add juice. Blend. Add oil, vanilla, honey, sugar, nutritional yeast, rice syrup, and maples syrup to the blender. Blend briefly. Add wet ingredients to dry ingredients and stir them together. Pour cake batter into a lightly oiled cake pan. Bake for 40 minutes.
