Wash and thoroughly rinse berries and peaches. Peel and slice into 8 equal parts. Arrange fruit in a glass pie pan. Add agar agar flakes, honey, maple syrup to the juice in a 2 quart sauce pan and bring to a boil. Turn down the heat to low and simmer for 5 minutes until the flakes dissolve, stirring occasionally. Slowly pour the liquid into the pie pan. Put pan in the refrigerator and let sit for 4 hours or until firm.
