Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 cup onion, chopped
- 1 tablespoon garlic, minced
- 1 large eggplant, chopped
- 1 ¼ cup zucchini, chopped into cubes
- ¾ cup red bell pepper, chopped
- 1 cup of Thai coconut milk
- ½ teaspoon chopped parsley
- 1 tablespoon cilantro, minced
- Celtic Sea Salt
- Black pepper
- ½ teaspoon dill
Instructions
- Place oil in a large saute pan on medium high heat. Add onion and garlic and cook for 3 minutes, stirring frequently. Add eggplant and cook for 5 minutes, stirring frequently. Add Thai coconut milk, cook for 5 minutes stirring occasionally. Add remaining ingredients including cilantro. Mix well.
