Fresh Pasta Primavera

Ingredients
- 3 cups of rice pasta, assorted colors
- 3 cups mixed vegetables (zucchini, broccoli, carrots, cabbage, squash etc.)
- 1/2 cup maple syrup
- 1/2 cup balsamic vinegar
- ½ cup red bell pepper, julienned
- ¼ cup hemp seeds
- 3 tablespoons Kalamata olives, sliced
- 2 tablespoons onion, diced
- 2 tablespoons parsley, chopped
- 2 tablespoons basil, chopped
- 1 teaspoon garlic, minced
- 1 teaspoon tamari
- ½ teaspoon oregano
- ½ teaspoon thyme
- Pinch cayenne pepper
- Celtic Sea Salt
- Black pepper
Instructions
- Bring 8 cups of water to a boil in a large pot. Add noodles and cook until pasta is soft with some firmness, approximately 8 minutes, stirring occasionally. A small amount of olive oil may be added to the pot to prevent from sticking. Remove from heat, drain, rinse under water, drain well and place in a large mixing pot. Steam the vegetables, then run under cold water. Add to bowl with pasta and remaining ingredients, mix well.
